Cribbed a few recipes together, and improved the technique.<\/p>\n<p><a href=\"https:\/\/mindbleach.com\/words\/wp-content\/uploads\/2013\/08\/wpid-IMG_20130821_203606.jpg\"><img decoding=\"async\" class=\"alignnone size-half\" title=\"IMG_20130821_203606.jpg\" alt=\"image\" src=\"https:\/\/mindbleach.com\/words\/wp-content\/uploads\/2013\/08\/wpid-IMG_20130821_203606.jpg\" \/><\/a><\/p>\n<p><strong>Salted Caramel Sauce<\/strong><\/p>\n<p>A. 500g caster sugar<br \/>\nB. 150mL water<br \/>\nC. 300ml double cream<br \/>\nD. 250g butter<br \/>\nE. 1 heaped tsp salt<\/p>\n<ul>\n<li>Heat cream, butter, and salt in a small saucepan, at low heat.<\/li>\n<li>Stir occasionally, continuing on with the recipe, and switch heat off and cover once the butter is dissolved.<\/li>\n<li>In a heavy-based medium saucepan, heat sugar &amp; water together until the sugar fully dissolves.<\/li>\n<li>Increase the sugar mix&#8217;s heat to high, and bring to the boil.<\/li>\n<li>When boiling cover the pan for 2 minutes, to allow the buildup of steam to dissolve any grains of sugar on the sides.<\/li>\n<li>Uncover the pan, boil without stirring.<\/li>\n<li>Watch pot carefully! When mixture reaches &gt;170\u00baC and becomes golden, remove from heat. (IR thermometers are great)<\/li>\n<li>With a long-handled spoon stir the mixture, while <em>very slowly<\/em> pouring in the cream\/butter mix. The mixture will foam up a lot!<\/li>\n<li>When all combined, put back onto medium heat, still stirring.<\/li>\n<li>Bring mixture back to the boil for a few minutes, lifting the pan off the heat if it threatens to boil over.<\/li>\n<li>Let cool for 10 minutes, then taste test. You might need to sample several times.<\/li>\n<li>Pour into jars, over ice cream, cakes, whatever you like.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Left-over cream, what can I do with this?
