Don&#8217;t tell your guests that it&#8217;s vegan, and they&#8217;ll never guess&#8230;<\/p>\n<h1>Vegan Chocolate Mousse Cake<\/h1>\n<p><em>Makes a 20cm dia cake &#8211; Serves 8<\/em><\/p>\n<p><a href=\"https:\/\/mindbleach.com\/words\/wp-content\/uploads\/2015\/03\/LrQmlxw1.jpg\"><br \/>\n<img decoding=\"async\" class=\"alignleft size-full wp-image-269\" src=\"https:\/\/mindbleach.com\/words\/wp-content\/uploads\/2015\/03\/LrQmlxw1.jpg\" alt=\"Vegan Chocolate Mousse Cake\" \/><br \/>\n<\/a><\/p>\n<h2>Cake<\/h2>\n<ol style=\"list-style-type: upper-alpha;\">\n<li>1<sup>1<\/sup>\/<sub>2<\/sub> cups plain flour<\/li>\n<li>1 cup brown sugar<\/li>\n<li><sup>1<\/sup>\/<sub>4<\/sub> cup cocoa<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li><sup>1<\/sup>\/<sub>2<\/sub> teaspoon salt<\/li>\n<li><sup>1<\/sup>\/<sub>3<\/sub> cup vegetable oil<\/li>\n<li>1 teaspoon vanilla essence<\/li>\n<li>1 teaspoon apple cider vinegar<\/li>\n<li>1 cup water<\/li>\n<\/ol>\n<ol>\n<li>Preheat oven to 180 degrees C, and line with paper or grease a 20cm round cake tin.<\/li>\n<li>Sift A-E together into a bowl.<\/li>\n<li>Add the remaining ingredients, mix with a blender until smooth.<\/li>\n<li>Pour into cake tin, bake for 45 minutes, or until cake skewer comes out clean.<\/li>\n<li>Remove from oven, allow to cool, remove carefully from the pan for further cooling.<\/li>\n<\/ol>\n<h2>Mousse<\/h2>\n<ol style=\"list-style-type: upper-alpha;\">\n<li>1 block (200-250g) dairy-free dark chocolate, melted.<br \/>\n<em>(Many dark chocolate brands use milk solids, check the ingredients)<\/em><br \/>\n<em>(An easy method to melt chocolate; break it into squares and microwave for 20 seconds at a time, stirring well each time, until all melted)<\/em><\/li>\n<li>1 packet (250-350g) of silken tofu<\/li>\n<li>2 tbsp milk (coconut, almond, rice etc)<\/li>\n<li>3 tbsp icing sugar<\/li>\n<li>1 tsp vanilla essence<\/li>\n<li>Generous pinch of salt<\/li>\n<\/ol>\n<ol>\n<li>Put all ingredients together in a bowl.<\/li>\n<li>Blend at high speed for several minutes. The mousse should be completely smooth.<\/li>\n<\/ol>\n<h2>Assembly<\/h2>\n<ol style=\"list-style-type: upper-alpha;\">\n<li>Half a jar of strawberry jam<\/li>\n<\/ol>\n<ol>\n<li>Turn the cake out of the pan.<\/li>\n<li>Using a long bread knife, cut the cake in half horizontally. Put the lower half on a plate, and the upper half aside.<br \/>\n<em>(The cake will be fragile, so take care to prevent it from cracking)<\/em><\/li>\n<li><em>If your cake tin is the spring-form kind, place the ring over the cake.<\/em><\/li>\n<li>With a spatula, spread the mousse over the lower half of the cake.<\/li>\n<li>Place the upper half of the cake over the top.<\/li>\n<li>Melt the jam in the microwave (about a minutes) until molten.<br \/>\n<em>(Warning: Hot jam is hot.)<\/em><\/li>\n<li>Spread\/pour the jam over the top of the cake.<\/li>\n<li>Chill in the fridge for 1 hour.<\/li>\n<\/ol>\n<p>Serve on its own or with ice cream\/sorbet.<br \/>\nIf vegan: Do your best to keep everyone else away from your precious cake.
